Ingredients

  • 1 medium cauliflower head cut into florets
  • 0.75 cup BBQ sauce your favorite
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon cooking oil
  • red pepper flakes optional, pinch

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash the cauliflower and cut into florets of roughly equal size. Pat them dry with paper towels.
  3. In a large bowl, mix the BBQ sauce, garlic powder, onion powder, smoked paprika, salt, pepper, oil, and red pepper flakes if using.
  4. Add the florets to the bowl and toss gently until evenly coated in the BBQ mixture.
  5. Spread the florets in a single layer on the prepared baking sheet, leaving space between pieces.
  6. Roast for 25–30 minutes until tender and edges are slightly charred. For extra caramelization, broil for 2–3 additional minutes. Serve immediately.

Notes

Do not overcrowd the baking sheet — give florets space to roast, not steam. For extra caramelization, broil for 2–3 minutes at the end. Use fresh cauliflower for best texture. Leftovers keep refrigerated for 3 days.
