Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash the cauliflower and cut into florets of roughly equal size. Pat them dry with paper towels.
- In a large bowl, mix the BBQ sauce, garlic powder, onion powder, smoked paprika, salt, pepper, oil, and red pepper flakes if using.
- Add the florets to the bowl and toss gently until evenly coated in the BBQ mixture.
- Spread the florets in a single layer on the prepared baking sheet, leaving space between pieces.
- Roast for 25–30 minutes until tender and edges are slightly charred. For extra caramelization, broil for 2–3 additional minutes. Serve immediately.
Notes
Do not overcrowd the baking sheet — give florets space to roast, not steam. For extra caramelization, broil for 2–3 minutes at the end. Use fresh cauliflower for best texture. Leftovers keep refrigerated for 3 days.
