- Combine the ketchup, jelly, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper in a medium saucepan. Add cayenne if desired.
- Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally to prevent sticking.
- Reduce the heat to low and simmer for 20–25 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld.
- Taste and adjust seasoning — add more vinegar for tang or more jelly for sweetness.
- Remove from heat and let cool. The sauce will thicken further as it cools.
- For a smoother texture, blend with an immersion blender. Transfer to a jar and use immediately or refrigerate.
Notes
Store in an airtight jar in the refrigerator for up to 2 weeks. Use grape jelly for classic sweetness or peach preserves for a fruitier depth. Add cayenne for heat. Brush on meat in the last 10 minutes of grilling to prevent burning.
